The Hill Station Signature Restaurant is the only restaurant in Sapa specialising in authentic ethnic food from the area served in a unique and inviting atmosphere.
The culinary tradition of the ethnic groups around Sapa is based on the fantastic natural produce resulting in simple dishes with clear flavours and unique taste combinations. Due to the tradition of slaughtering of whole animals at festive gatherings it is a culture who has embraced the concept of nose to tail eating and the lack of refrigeration means there is a wide array of hot & cold smoked meats resulting in some exciting and unique textures and flavours.
For vegetarians we also offer excellent seasonal vegetables of the area presented in the traditional style plus the high quality Sapa rainbow trout which has turned into a Sapa speciality since the breeding program started in 2005. The Hill Station farm is situated 13km from Sapa in Hau Thao village and currently raises chickens & ducks together with a variety of seasonal vegetables. In connection with the farm we have a corn field where we harvest corn which is dried in order to feed the animals throughout the winter making for happy ducks & chickens and great organic final produce.
The caretakers at the farm are a local Hmong family and it is run the traditional way such as to make sure that the produce we receive from the farm is the same as what has been produced in the valley for generations. Plans are currently underway to offer visits & cooking classes at the farm and we hope to be able to implement this in the near future – do not hesitate to contact us should you have a wish to incorporate a visit to the farm as part of a cooking class or dinner at The Hill Station Signature.
